White pudding From Cariadoc, Icelandic p. 216/D1 One shall take sweet milk and well crushed wheat bread and beaten egg and well ground saffron and let it all boil until it grows thick. Then pour it upon a dish and throw in butter. This is called white pudding. Turn bread into crumbs. Beat eggs, mix with milk and beat. Grind saffron and add, then add crumbs. Heat for about 5 minutes, put in dish and add butter. Test: 8 fl oz milk 2 slices bread (4 oz) 2 eggs 6 threads saffron Bit of butter Remember that what you’re doing here is taking a scrambled egg mix, thickening with bread, and boiling. Keep stirring! Not much taste to it. Maybe add more saffron (though “white”?). Their butter would have been heavily salted: maybe add salt? This did enough for about 6. Feast quantities: 4 pints milk Loaf and a half of white bread: remove crusts, turn to crumbs in food processor. 24 eggs (take blender!) Saffron: see how much I’ve got.
