Sian's non-alcoholic "metheglin"

As served at Not-May revel, July 2004, and the Dimingsdale revel, Sept 2005.

This is more or less a metheglin recipe, but skipping the yeast, and the fermentation. A mead alternative for drivers, children, fighters, and others who need to avoid alcohol.

Take herbs: woodruff, rosemary, thyme, lemon balm, bay leaves.
How much of each? Well, due to the wonders of modern technology I can say: this much. (Click to zoom in in a new window if you need a better look).

Herbs

Boil for about 10 min in saucepan-full of water. Transfer water to big pan, add fresh water (from kettle), repeat until big pan is full (a bit over a gallon)

As the big pan fills, start mixing in the Honey. I used 2 jars for a bit over a gallon of water, but add according to taste.

Heat big pan enough for honey to dissolve, but do not boil.

Allow to cool, put in 2 litre bottles, serve the next day.
