Kyd stewyd

As done at the Briavels 2001 feast and again at Coronation

"Kyd stewyd.
Take a kydde, & yf thu will thu may roste hiy a lytill; or els chop hit raw in pecys. Do thereto onyons & herbes & swete broth & wyne, hole clovys, macys, & othir pouders, & stew hit togedyr. Sesyn hit up with sauce gynger or galentyn, & with a lytyll lyour of bred, safron, & salt; & serve hit forth."

10lb goat
10 onions, chopped
Sage, rosemary, thyme (home-grown)
Mace, cloves, cinnamon, ginger
Stock made from bones etc.
Rye bread made into crumbs as thickener (I have wheat-allergics to consider)

Boil 30 min to an hour, then drain off most liquid, mix in bread, cook, serve. Will thicken as cools.
I can't use wine due to allergies, but red grape juice works well.

The quantities above were for Briavels, serving about 50. For Coronation, I used about 16 lb of goat.
