Take benes and seep hem almost til pey bersten. Take and wrng out be water clene. Do therto oynouns ysode and ymynced, and gerlec prewith; frye hem in oile oper in grece, & do perto powdour douce, & serve it forth.

The beans available in the Middle Ages were broad beans and kidney beans. We assume the beans eaten fresh were of the former variety.

Recipe

If you are using fresh beans par boil the onions with the beans for a few minutes, then remove them and let them cool while the beans finish cooking. In any case mince parboiled onions; drain the beans and mix with the onions and garlic. Sauté, stirring, about 5 minutes.
