Pynonade OP #58 "Take mylke of almond drawyn with swete broth; do thereto pynes, a grete dele. Then take wardons, quinsys, & costards, sodyn & groundyn and drawyn thorow a streynour with wyne & good pouders; do togedyr. Boyle hit; serve hit forth." The fruit here is pears, quinces, and more pears. Even if I could get quinces, peeling and chopping that lot would take forever. Fortunately Tescos still do those giant cans of pears. Two big cans. Drain syrup off, as it’s too sweet. Cook pears in white grape juice until soft. Drain as much as you can, mash. Mix the extra juice with almonds, stir in. Add pine nuts. Add “good powders” (cinnamon and a bit of mace seems to work nicely). Boil until thickened: serve. 2 big cans pears. About a litre of grape juice About 500g ground almonds. 300g pine nuts.
